With several options on the chart where the ripened meats are highlighted, here the meat goes through a careful process of maturation in the sight of the customer, which can vary between 30 days and 45 days, to make it very tender and tasty.

on request we can extend the maturation period, beyond 100 days. this is in Portugal, one of the only restaurants, which makes it with the quality and know how required for this purpose.
